The alchemy of fire
At HUŎ (火), we build our culinary identity on the element that transformed Chinese cuisine: fire. Our name represents huo hou (火候), the ancient art of fire mastery, where roaring temperatures and split-second timing intersect. Within our kitchen, this intense flame wraps around the curved steel of the traditional wok, birthing the legendary wok hei (鑊氣) or “breath of the wok”, a smoky magic that infuses every dish with character and soul.
A dim sum odyssey
Our dim sum is a testament to the skill of Chef Leo. Crafted by hand in small batches, each delicate parcel is made using fresh ingredients and colourings derived from nature. Chef Leo honours the most traditional methods to create perfectly textured skins and flavoursome fillings, bringing a piece of authentic heritage to your table.
Shaking things up
Our bar menu is an extension of the HUŎ philosophy, brought to life by the skill of our mixologists. Asian-inspired cocktails, built from house-made infusions, sit alongside coveted Japanese whiskies, fine wines, and artisanal beers. Every drink is mixed with precision, designed to complement the bold, vibrant flavours of our food.
Our suppliers
Great cooking relies on the provenance of its ingredients and our chefs work closely with a network of trusted suppliers to ensure we maintain the highest standards. For our speciality Asian produce, we partner with a family-run importer that has spent nearly forty years sourcing for the UK market. Our meat is provided by a Spitalfields-based butcher specialising in traditional hand-cutting, while our vegetables are selected daily from Covent Garden Market. By combining reliable British suppliers with authentic global imports, we ensure that every ingredient in our dishes has the quality and flavour required to bring our menu to life.
